My buddy Tom swore preheating was a waste until he made a batch of frozen fries that came out soggy and pale. He tried it my way next time and called me up to admit I was right, they were way crispier.

That 45 day wait is annoying yeah but think about what happens when you rush the permit route and an inspector shows up after your tenants moved in. I've watched projects get shut down for months over one thing like a window being 6 inches off from the plans. Sometimes that extra time with the board actually saves you from way bigger problems down the road.

Gotta disagree a bit here. I've had plenty of folks tell me wild stories that sound great but don't match what the paperwork says, you know? Like a guy swearing his check engine light only came on after he hit a pothole, but the code showed it had been misfiring for weeks. Codes are just data points, sure, but they don't lie about timing or frequency the way a customer's memory does. I'll take a freeze frame data readout over someone's "it just started doing this" story nine times out of ten.

Always the little details that nobody tells you about until you've already messed up. Same deal with cooking - one tiny trick like resting meat before slicing can make or break a whole meal.
