inI was sure that 'room temp eggs' for cakes was just baking snobbery until my chocolate cake came out dense as a brick for the third time in a row.
Beth nailed it with the smoking mixer, that's exactly what happened to me with the eggs situation. The first time I actually let them sit out, the batter came together so smooth and fluffy I literally texted my mom about it like a lunatic. Now I'm militant about checking the temp of everything before it goes in the bowl, never trusting the package to tell me it's ready.

inA random guy in Memphis showed me a better way to check brisket doneness
Wait, hold up. A random stranger walked up to you while you were at a contest and showed you this? That's wild. I've been cooking brisket for three years now and I still have trust issues with my fingers. I feel like I'd just be guessing and end up with a dry hunk of meat. Did he actually push on your brisket with his finger, or did he just describe it? I need to know if he touched your cooking meat because that would freak me out a little, even if he was helpful.

inHad a butcher tell me my break joints looked like I used a hammer, switched to a bone saw and never looked back
Man that old timer really did you a solid. Happy you found the saw.

inHad a chat with a hostel owner in Lisbon who changed how I pack
Stick to just a 30L bag for a week, how do you handle dirty laundry or buying things you actually need on the road? I tried downsizing to a 40L pack but ended up wearing the same two t-shirts for days because I couldn't fit any backup options. Do you just do sink laundry every other night, or are you fine with repeating outfits the whole trip?

inBought a cheap metal detector off Amazon for $80 and found nothing but bottle caps in my backyard for 3 months
47 bottle caps from one yard? Oh my goodness, that is honestly a bit shocking. I can't imagine digging up that many bottle caps and not a single old coin or anything interesting. You must have felt like you were just cleaning up someone's old trash pile instead of treasure hunting. I remember my first cheap detector gave me nothing but rusted nails and foil for weeks before I finally found a 1950s dime. I think you definitely deserve a better machine after all that work.
