@nathanrobinson that's rough, 12/4 cherry splitting after a week makes my walnut board sound lucky. It's like wood just decides when it's done with you, no matter how much you babied it.

Exactly, the sear is doing way more than just adding color. That browning process basically creates a whole new layer of flavor compounds that you just can't get any other way. Without it you're basically leaving half the taste potential of that pork chop in the pan.

Man, that's a rough feeling when someone points out something you thought was fine and it turns out it's a safety hazard. Good on that Tacoma guy for taking the time to show you the right way instead of just laughing. I had a similar wake up call with a gangway once, and swapping a bungee for a proper line made all the difference. It's those little tricks from old salts that save your gear and your hide.
