My buddy had a diamond blade seize up on him mid-cut and it basically turned into a frisbee of death, so I get the heat thing. Anyway, @stone.sarah, that patio job turned out clean from the sounds of it.

inVent: My uncle swore by a 275-degree brisket cook for 8 hours, but mine came out tough as a boot.
I had an old Chargriller that did the same thing. I ended up putting a baffle made from a cheap baking sheet between the firebox and the cooking chamber. That fixed the hot spots and let me hold 250 without fighting it the whole time. I still didn't push it much past that though, those thin walls just bleed heat too fast. It took some trial and error but I got consistent results after that.

Have you ever tried those frozen fries that are par-cooked and you just finish them in the oven or fryer? @evan_harris14 nailed it with the middle ground thing, I keep a bag of those on hand for busy nights and nobody ever notices the difference. What frozen shortcuts do you swear by?

Oh man, that hit close to home. My sister straight up told me my "dump chicken" was bland and I was so mad but she was right. Biggest thing that changed my game was browning the meat first, you're already on that. Also try layering your spices in stages, not just dumping it all at once. A little smoked paprika and chili powder goes a long way. And here's the real magic trick: deglaze the pan after browning with a splash of broth or even water, scrape up all those browned bits, and pour that into the slow cooker. That's where the actual flavor lives. You can still be lazy with the prep but that one step makes it taste like you actually tried.
