Had a customer ask for a specific cut I'd never heard of before

This older guy came into the shop in Omaha last Tuesday and asked if I could do a 'Denver steak' from a chuck roll. I had to admit I didn't know it. He explained it's a newer cut from the shoulder, super tender if you get the seam right. He was super nice about it and even drew a quick diagram on a paper towel. Has anyone here actually broken one down before? I'm curious about the yield.

Showerthought: Saw a guy in Austin using a garden sprayer for his mop sauce

I was at a cook-off in Austin last weekend and saw a pitmaster using a clean garden sprayer to apply his mop sauce to a whole brisket. It gave him a super even coat without splashing and he said it saved him a ton of time. Anyone else tried something weird like that for applying liquid during a cook?

Showerthought: I found out how much a single bay leaf costs per leaf

I was cleaning out my spice cabinet and saw a jar of them I bought for $4.99, so I counted them and there were 87 leaves. That's less than 6 cents per leaf, which seems crazy cheap for something that makes a whole pot of soup taste better. Has anyone else done the math on a cheap ingredient and been surprised?

Rant: Had a thought about 'The Graduate' while replacing brake pads yesterday.
