Sous vide skepticism faded after one perfect steak dinner

wait til you try it on vegetables, seriously. I read somewhere that carrots cooked sous vide with a little butter and salt taste almost as sweet as candy because the low heat keeps all the natural sugars locked in. tried it myself after that and it's kinda mind blowing how good they come out. also heard people use it for things like egg bites and even cheesecake, though I haven't gotten that fancy yet. cheaper cuts of meat work way better than I expected too, like that sirloin you mentioned.

Overheard a guy in a Lisbon cafe say he books stays by the 'laundry test'

Completely changes the rhythm of a long stay" is funny to me. I've done month-long trips with just a sink and some travel soap and it was fine. You spend maybe 20 minutes hand washing a few things every few days. That's less time than walking to and from a laundromat anyway. Plus half those apartment washers are these tiny combo units that take three hours and leave your clothes damp. I'd rather just pack less and do a quick sink wash than gamble on a machine that might flood the kitchen. But hey, to each their own.

Picked up a tip from an old Delta mechanic about safety wire twisting

Yeah I used to think you always gotta go a little further just to be safe but honestly this thread is changing my mind. Seen too many guys snap wires from overdoing it, makes sense to stop where it feels right.

Walked out of a library sale with a 1963 guide to raising chinchillas for just 10 cents, is that actually a weird flex or do you guys also hunt for the most bizarre topics?

Oh for crying out loud, that's a steal and honestly a kind of beautiful waste of time. Three hours on fur grading? That's dedication. But my real question is, did the book actually tell you what you're supposed to do with the chinchillas after you grade them? Like, are you selling the fur or just keeping a very well-dressed rodent?

My mentor told me to stop using alcohol-based toners on dehydrated skin - I fought her for 3 years

Yeah I used to think alcohol was always bad in skincare but this made me rethink that.
