inWatch out with that new 'quick cure' method for salmon gravlax
Yeah, that sugar to salt ratio sounds way off. The quick cures I've seen that work use way less salt, not more. You basically do a light cure with maybe a tablespoon of salt per pound for just a few hours, then rinse it really well. It's more like a quick pickle, not a full preservation. Trying to speed up a real cure by just dumping more salt on it is gonna ruin the texture every time.

But is it really that big of a difference for the average person? Seems like overkill to me.

That Watergate salad is a total time capsule lol. The weirdest one I ever saw was a tomato aspic with shrimp and celery suspended in it, like a savory jello nightmare. My aunt used to make a "salad" with lime jello, cottage cheese, and canned pears that still haunts me. People back then really thought putting anything in gelatin made it fancy.
