Bought a $200 immersion circulator for the kitchen and it paid for itself in a month
I got a SousVide Supreme circulator for a special dinner party and started using it for prep. It lets me cook 24 chicken breasts to perfect doneness overnight, saving me two hours of active time every morning. Has anyone else found a piece of gear that cut down your prep time that much?

Sounds like a lot of chicken. Do you own a restaurant or something?

You ask if it's for a restaurant... but what if it's for a dog shelter? Big bags of frozen chicken are a cheap way to make a lot of food for rescue dogs. I used to volunteer at one that did that. It's not always about people food.
