Tried a new way to break down a hog shoulder after talking to a guy at the Des Moines meat show.
He said to leave the skin on during the initial split, said it keeps the meat tighter. I tried it on six shoulders last week. The yield was better, but the clean up took longer. Anyone else try this method?

Why would you want to keep the skin on?

@tylermason I get why you'd ask that. But man, my buddy Dave left the skin on some potatoes for a party dip and everyone was raving about the little crispy bits. He said it was way easier too, didn't have to mess with a peeler or anything. @lisa671 I'm with you on the lazy train, that's basically what Dave was going for.
