Honestly, that's the only way I buy chicken now. I'll do a big pot of chicken and rice with the shredded meat on Monday. Then use the broth from the carcass for a simple soup with whatever veggies are left in the fridge. The last bits get mixed with mayo and some celery for sandwiches. It feels like a magic trick, getting a whole week of lunches from one bird.

Stretch it even further by saving the bones after making broth. Grind them into bone meal for the garden or add them to dog food. That bird owes you nothing at the end.
