inMy neighbor changed my mind about painting my own fence
Oh man, that's so true. Honestly, my big one was not checking for wall studs before hanging a heavy shelf. I just went for it and put a huge hole in the drywall. Now I use a stud finder every single time, no excuses. @jessel35 gets it, you gotta have a plan for when things go wrong.

inI finally nailed my sourdough crust after switching my baking vessel
That old crusty Dutch oven is the real deal. My mom's looks like it went through a house fire, but nothing bakes the same. All that baked-on stuff just makes the crust better somehow. It's like the pot remembers every good loaf you ever made.

That comment would get in my head too.

inUsed to wrap my brisket in foil, now I'm a butcher paper guy
Paper is the move for sure... foil just steams it too much. The bark stays way better with that little bit of breathability. Wrap when the bark looks set and the color is right, not just at a set temp.

inOverheard a building manager say all elevator techs are the same
Man, that kind of talk drives me up a wall. They see the part swap but have no clue about the years it takes to learn the systems behind it. Diagnosing a fault code is like being a detective, you gotta know the history of the machine and how all the pieces talk to each other. Tell them anyone can change a light bulb, but it takes an electrician to find the short in the wall.
