My grandma's pie crust recipe totally failed on me last Sunday

I was making her famous apple pie for a family dinner in Springfield, and the dough just turned into a sticky mess that wouldn't roll out. I think the butter was too warm, but she always just said 'use your hands until it feels right'. Has anyone else had a family recipe that just doesn't work sometimes, and how do you fix it?

Yeah, "use your hands until it feels right" is the kind of advice that only works after you've messed it up a few times. If the butter was too warm, try chilling the whole dough ball for like 30 minutes before you even try to roll it.

Ugh, that's the real truth right there. I tried making biscuits once and the recipe just said "mix until it comes together." Mine was a greasy mess because the butter melted. Chilling the dough is the only fix when that happens. You have to learn from the fails before the vague advice makes any sense. What were you trying to make?
