I thought adding a can of soda to pulled pork was a dumb gimmick until my brother in Denver made it and the meat fell apart after 8 hours.
Has anyone else tried this weird trick or got another one that sounds fake but actually works?

Man, the soda thing works because it's basically a cheat code for barbecue science. The acid in the cola breaks down meat fibers, and the sugar builds a crazy good bark. It's like a built-in marinade and glaze. I've done it with Dr Pepper on pork shoulder and it's unreal.

Right? @thompson.finley is totally on point with the science. I was the same, thought it was a joke. Tried a can of root beer with a cheap pork roast in my slow cooker because I was out of broth. The meat just shredded with a fork, and the flavor was wild. It's my go-to lazy method now. Who would have guessed?
