Silverskin was my nemesis until this week

I always messed up removing silverskin from beef rounds, either tearing the meat or leaving bits behind. Ngl, I watched a video where they said to use the back of the knife to scrape it off, and it worked perfectly. What tricks do you use for clean silverskin removal?

Heard using a paper towel helps grip it.

Wait, you used the BACK of the knife? That's wild. I've always fought with the sharp edge and butchered it, literally. Gonna try the scrape method next time for sure.

The scrape method you mentioned reminded me of my friend Sarah. She used to hack at parsley with the sharp edge and get green bits everywhere. Last week, she tried scraping with the back of her chef's knife to move it to the pot. It kept the herbs intact and made clean up easier. She said it felt like learning a basic skill all over again. Pretty cool how such a small change can make a big difference.
