Old timer at the shop told me to never trust a pre-packed grind

Back in 2019, this graybeard guy at my first butcher gig said always grind your own from trim or you'll get burned. I ignored him once on a busy Saturday, grabbed a tube of pre-ground chuck, and ended up with a recall from the supplier three days later. Anyone else got a piece of advice they wish they'd listened to sooner?

Oh man, that story hit close to home. I had a similar gut punch last summer when I ignored my uncle's warning about never buying pre-sliced cheese from the deli counter unless you watch them slice it. Grabbed a pack of what I thought was provolone, turned out to be some weird processed mix with wood pulp or something, totally ruined my lasagna for a family dinner. The worst part is that feeling of knowing better but getting lazy, you know? Those old timers have a way of being right about the small stuff that actually matters.

The old timers have a way of being right" - that's what gets me every time. Did you ever confront the deli about that cheese or just chalk it up as another lesson?
