Hot take: I found that dry-aging a whole ribeye primal in my home fridge works better than a fancy setup
I tried wrapping a $160 prime ribeye in cheesecloth for 21 days with no special equipment, and the crust turned out perfect with zero mold issues. Has anyone else had luck with a budget dry-aging method?

Whoa, I gotta disagree a bit here. A home fridge without humidity control is a gamble, even with cheesecloth, and 21 days is risky unless your fridge is really dialed in. Did you check the internal temp and air circulation regularly?

Did you use a separate thermometer to double check the temp or just trust the fridge's dial?
