Honestly, I was wrapping my brisket after 3 hours for years until I saw a video from a Texas guy who just never wraps at all.

Yeah, that no-wrap method is a total game changer. I tried it last summer and the bark was unreal, way better than anything I ever got from wrapping. It takes more time and you have to watch the fire closer, but the texture is worth it. Once you get that thick, crunchy bark you just can't go back to steaming it in foil.
