Pro tip from a customer at my old bakery in Tucson

A regular told me 'let your buttercream sit for 30 minutes after mixing, it spreads like a dream.' I tried it, and she was completely right. Anyone have a similar little trick that made a big difference?

Hold up, you just let buttercream sit out on the counter for half an hour? Doesn't that make it a total food safety issue, especially in a hot place like Tucson? I'd be terrified of making someone sick. The butter would be so soft and warm. I guess if you use it right away maybe it's fine, but that feels like playing with fire.

I heard Stella Parks once say letting buttercream rest is key for aerating it.

Hey @the_karen, it's just resting at room temp, not sitting out all day. The butter gets to a perfect spreading texture without being a safety risk.
