Ever think about all the weird, perfect stuff you'd miss if you stuck to a plan? Like last year I ended up at some guy's backyard BBQ in Portugal because I took a bus to the wrong town, and it was honestly the best chicken I've ever had. You'd never find that place on a map or a travel blog. It's the getting lost that gets you the good stories, not the checklist of must-see spots. A rigid schedule just gives you the same photos everyone else has.

inWarning: Hand saw skills are disappearing from the trade
Man, I used to think a fresh blade in the power saw was the only way to go for speed. But I forced myself to learn a hand saw for some tricky trim, and the control for a perfect finish cut is just... you can't beat it. It stops all that tear-out and chipping I was always fixing after.

inI finally made a smooth bechamel sauce after countless attempts
My friend tried to make a roux for gravy last Thanksgiving. She got nervous and turned the heat up too high. The flour and butter mixture never got past a blonde color. Poured in the broth all at once and it just turned to soup. Total pancake batter situation, had to toss it out. Now she uses a lower flame and waits for it to smell nutty.
