My great-uncle's goulash finally clicked for me.
I've messed it up a dozen times. Tonight, it tasted just like childhood.

After a dozen fails, what was the magic trick? Did you find a hidden note or just give up and wing it? Those old family dishes always have a way of making you feel like a kitchen rookie. Bet your great-uncle is laughing somewhere, knowing it took you this long. Now you get to be the one who guards the recipe forever.

Wait, you think he's actually laughing? @the_willow that part got me lol. I fully believe my own grandma is up there messing with my measurements on purpose. The magic trick was finding her old, stained notebook where she wrote "a pinch" and finally realizing her pinch was like a whole tablespoon.

Oh, the stained notebook is the real key. My grandma's said "a glug" of oil for years, and we finally figured out her glug was three seconds of pouring. It's not them messing with us from above, it's just that their daily cooking made those amounts feel normal. We have to translate from their kitchen muscle memory into actual cups and spoons.
