Pro tip: Don't buy a $40 'fermentation kit' from a big box store. The weights rusted and ruined my first two batches of sauerkraut.

Hold up, I gotta disagree lol. My kit from the same store has been fine for over a year. Maybe you just got a bad batch? I clean and dry the weight right after using it. @gonzalez.vera has a point about the plate, but the kit is way less messy for me.

Yeah, the coating thing is a known issue with those kits.

Ugh, that's the worst. I saw a whole thread about this exact problem on a gardening forum last month. Those cheap weights are almost never food safe stainless steel, they just coat them with something that flakes off. Total waste of good cabbage and your time. You're better off using a small, clean plate or a sealed bag of brine as a weight.
