My overfilled jar of sauerkraut burst open overnight

I thought packing jars full was smart to fit more in. Then a loud pop woke me up and kraut was all over the kitchen. The gas had no room to escape so it blew the lid. That mess made me see why headspace is not just a suggestion. Now I always leave an inch at the top and my batches turn out fine.

Did the lid seal too well, keeping all the gas in?

That much pressure would blow the seams.

Sealing too well isn't really the issue if the jar's overfilled. The gas has to go somewhere, and without headspace, it'll force the lid off every time.
