Hit 50 quarts of kimchi this month without even planning it

I was just making my usual napa cabbage batch (you know, the weekend project kind) and counted my jars yesterday. 50 quarts total, which is way more than I’ve ever done in a single month. I guess it’s because I kept tweaking my brine ratios after that first batch came out too salty back in early January. Has anyone else accidentally blown past their own fermentation goals like that?

Count 50 quarts and tell me that's just cabbage and salt. You ever have to scrub sticky red goo off your counters because you got sloppy with the brine math? I doubt it. This is about practice and learning, not some flex. I didn't set out to hit a number, I set out to fix my ratios and ended up with a bunch of good kimchi. That's not overzealous, that's just being consistent.

Wait, are we really counting jars and acting like we hit some kind of kimchi milestone? 50 quarts is a lot, sure, but it's just cabbage and salt. Seems like you just got a little overzealous with the experiments, not some huge achievement.
