Old wives' tales get passed down as gospel. Peeking doesn't ruin kraut, messing with the brine does. A quick look under a clean lid changes nothing.

Wait, is that because letting air in messes with the fermentation process? I mean, I've always wondered if it's just superstition or if there's a real reason. Like, does the temperature change or something when you open it? Idk, maybe it's just me but I'm kinda paranoid about following those old school rules.

People rush everything now and mess it up. Saw it with sourdough starters, everyone kept feeding them too early. Same with quick pickle recipes that turn out soggy. The waiting is part of the work, but nobody trusts the process anymore.
