Update: I used to think a good sear needed a smoking hot pan, but a chef in Portland showed me a different way.

Yeah, I learned that the hard way. I used to crank the heat so high I'd set off every smoke alarm in the apartment building. Turns out a medium heat and a bit of patience gets you a much nicer crust without the burnt taste.
