A regular at my old diner in Tacoma told me his mom always added a pinch of sugar to tomato sauce.

I argued it was wrong for years, but he said it cuts the acid without losing the bright flavor. Anyone have a different trick for balancing out canned tomatoes?

Actually thought that was a weird trick for the longest time. Tried it once and it really does work though. That little pinch just smooths everything out.

Sugar in sauce is basically a culinary apology to your taste buds (and it works).
