Watched a guy break down a whole lamb at the state fair in Sedalia and it fixed my boning technique
Stopped by the Missouri State Fair back in August and there was a butcher demo tent I almost walked right past. This older guy was breaking down a whole lamb on a folding table and he did the shoulder in like 90 seconds with just a 6 inch curved boning knife. I had been wrestling with shoulders for 12 years, hacking at them with a stiff straight blade and wondering why my yield was garbage. He told me to stop fighting the seams and just let the knife ride the bone, and now I'm getting a solid 15 percent more usable meat off every lamb. Anybody else pick up a technique from a random demo like that?
