Just saw my pork shoulder yield jump 12% after switching to a new boning knife from Dexter
I was using an old Chicago Cutlery blade for years, but the thinner, sharper profile on the Dexter-Russell Sani-Safe 6-inch curved boner lets me follow the seams way closer, saving a ton of meat I used to leave behind. Anyone have a different brand they swear by for breaking down primals?

Switched to a Victorinox boning knife a while back. It just feels right in the hand, you know? Never looked back.

Ever notice how once you find the right tool for a basic job, you start seeing that same idea everywhere? Like when you get the perfect pen and suddenly you're picky about every pen you touch. It's not about the knife or the pen being fancy, it's about that click when something just works with your hand. Makes you wonder what other daily stuff we put up with that's almost right but not quite.
