Hit 500 pounds of sausage made in a single month this January - is that a lot or just average for a home butcher?
I got into a debate with a guy at the farmers market who said 500 pounds of sausage in a month is rookie numbers, but my neighbor who's been doing this 20 years said that's solid work for someone without a commercial setup. I hit that number grinding and stuffing every weekend in January, and it felt like a big deal to me until that market guy knocked it down.
