Had a customer last week ask me to butterfly a whole lamb
Guy comes in on a Tuesday afternoon, says he's throwing a party and wants a lamb butterflied for the grill. I've done it before but not in a while. Took me about 20 minutes with a boning knife and some patience. He watched the whole thing and asked if I could teach him. I told him sure, bring your own lamb next time and I'll walk you through it. Has anyone else had people ask to watch you work like that?

Wait, did he seriously just stand there and watch you the whole time?
That reminds me of a buddy of mine who works at a butcher shop. He had this one guy come in and ask if he could watch him cut a primal into steaks. My friend said sure, whatever, and the dude just pulled up a stool and watched for like 45 minutes without saying a word. Then he asked if he could come back next week to watch again. My buddy actually made a regular out of him. Pretty weird hobby if you ask me, but I guess some people just like seeing how things are done.

oh man, that butcher story is hilarious lmao. i totally get it though, like i'm the type of person who would probably do the same thing just because i'm nosy and curious about how stuff works. but knowing my luck, i'd end up accidentally knocking something over or getting yelled at for breathing too loud. i can just picture myself sitting there trying to be all cool and then somehow knocking a whole tray of steaks onto the floor lol.
