Can we talk about hitting 1000 lbs of trim processed in a single week?

It happened last month during the holiday rush, and it made me realize how much our prep area's layout matters. Anyone else track their trim weight and notice a big jump after changing their station setup?

Crazy amount" is putting it lightly. That's like a whole second job just moving leaves around. I bet your back was begging for a different layout by day two.
