Am I the only one who had a whole hog shoulder that just would not break down right?

I had this Berkshire hog shoulder yesterday that was supposed to be a simple break for sausage. The seam fat was like glue, man. I spent a solid 45 minutes just trying to get a clean separation of the picnic from the butt, when it normally takes me maybe 15. My knife kept catching in this weird, gristly connective tissue. I finally got it done, but my whole prep schedule was shot. Has anyone else run into a cut that just fights you for no clear reason?

That "fights you for no clear reason" thing happens with pressure washing jobs too, some surfaces just won't cooperate.

Honestly, I read that some surfaces have a weird coating that fights the water.
