Went to a BBQ joint in Kansas City that had a sign saying 'no sauce allowed'

Stopped at this hole-in-the-wall place called Smoky Joe's off I-70 last weekend. They had a big handwritten sign right by the counter that said 'If you need sauce, you don't belong here.' The owner came out and explained he spends 14 hours on each brisket and sauce just covers up bad meat. I ordered the ribs and honestly they were so juicy I didn't even miss the sauce. Has anyone else run into a pitmaster with a rule that weird?

Different meats need different things, and sauce can actually ruin good BBQ sometimes.

Whoa, I gotta push back on that a little. Nice meat shouldn't need sauce to be good, but a good sauce can definitely make it better. A lot of folks act like putting sauce on barbecue is some kind of sin, but it's just another layer of flavor. @thomas_wright41, I get that you want the meat to stand on its own, but a well-made sauce that matches the meat can really tie the whole thing together. I'd rather have a dry rub with a little sauce on the side than plain meat any day.
