Warning: Pitmaster at the festival rushed the brisket rest.

I noticed a pitmaster at a nearby event slice his brisket immediately. It was juicy at first but dried up quickly on the plate. Do you ever shorten rest times for competitions?

No way. I read that some competition judges actually want it hotter, so pitmasters will cut the rest short on purpose. Seems like it backfires for normal serving though.

People get too worked up over resting meat.

Simonsingh is right, judges want it hot but home cooks need that rest.
