My neighbor's brisket went from shoe leather to perfect in just two months

He used to cook everything at 350 degrees for three hours, no matter what. After watching a YouTube video from a Texas pitmaster, he bought a simple probe thermometer and started smoking at 225. The first time he tried it, he called me over and said, 'I think I finally get it.' The difference was night and day. Has anyone else had a friend make a huge leap like that after one simple change?

Seriously, it's not overthinking. That's like saying a clock is overthinking time. My buddy ruined so many good cuts before he got a probe. It's not about a million tools, it's about the one that tells you the only fact that matters, when it's actually done. His grandad probably had years of mistakes we don't hear about. Why guess when you don't have to?

Oh man, that reminds me of my first time trying to smoke a pork shoulder. I was so proud of it, but when I tried to pull it, nothing moved. I'd basically made a doorstop. A really expensive, spicy doorstop. Getting a simple thermometer was the game changer for me too. It's wild how one little tool can make you feel like you actually know what you're doing.

Okay but "game changer" feels like a lot for a thermometer. Like @emma_hayes80 I get it helps, but it's just a hunk of meat in the end. People act like smoking is some exact science you need a million tools for. My grandad did it for years by just looking at the dang thing. Maybe we're overthinking a piece of pork.
