Just hit 200 briskets on my old offset smoker
I started keeping a little notebook by the smoker back in 2018, just a tally mark for each one. I pulled number 200 off the grate this morning, and it hit me how much quieter and slower the whole scene feels now compared to when I was just trying not to burn the first few. Does anyone else get that shift, where the big numbers just start to feel normal?

Count my first 30 briskets as practice and the next 170 as practice too honestly. I still keep that notebook but I swear half the entries are just sloppy marks from when I was three beers deep and forgot if I already logged that one. The quiet slow feeling is real though, now I just sit and listen to the fire crack instead of pacing around like a maniac checking the temp every five minutes. Maybe I should start counting how many times I've burned my arm on the damn lid, that number's gotta be way higher than 200.

Your notebook must be a nice record, but my count would be higher if I included all my practice briskets.

That's so true, it's like how people only count the miles they run outside, not on a treadmill. The practice stuff is the real work, even if it doesn't make the final list.
