Rant: My grandma's biscuits used to come out like hockey pucks, now mine rise every time and the fix was dumb
She swore it was the oven but it was really that she mixed the dough for 8 minutes straight, and once I cut it to 30 seconds with cold butter in a Kansas kitchen last month they finally puffed up, so what's the one tiny habit you changed that saved a recipe you'd given up on?
So was it the cold butter that made the real difference or just not overworking the dough? I keep hearing both and I can never tell which one actually saves the biscuit. Curious what happened when you tried one without the other.
