My wife bet me $20 I couldn't bake bread without a mixer, and batch #4 proved her wrong
I always figured you needed a stand mixer for real bread, so I used mine for 6 years without thinking twice. Then our mixer died in March and my wife said no way could I do it by hand, which honestly annoyed me enough to try. The first 3 loaves came out flat as tortillas, but I finally figured out the dough just needs a good 10 minute knead and a warm spot on top of the fridge. Now I'm on loaf #14 and the crumb looks better than anything that mixer ever made. Anyone else here ditch a tool and end up baking better without it?
So was the bet that you couldn't do it by hand, or that you couldn't do it without whining about it for three loaves? My dad baked for years with nothing but a bowl and his own two arms, and his bread was better than the fancy stuff from the store. Funny how losing a $200 machine is what finally teaches you what your hands can do.
