Just realized sourdough starter doesn't need to be such a big deal
My neighbor Betty stopped me at the mailbox last week and said 'just feed it once a week and stop stressing.' She's been baking loaves since 1995 and her starter sits in the fridge most days. That one line made me stop checking on mine every morning. Has anyone else had a seasoned baker give them a brutally simple tip that changed everything?

Betty gets it. Once a week is plenty, the thing is practically indestructible.

12 uses and the bristles are already falling out of mine. How is that supposed to be indestructible?
