Question about a sourdough disaster last Tuesday

My starter, 'Bubbles', doubled overnight but my final loaf came out flat and gummy, even after a 14-hour cold proof. Has anyone else had a starter seem active but the bread just not work?

That "doubled overnight" thing can be a trap. It might have been all air, no real strength left. A fourteen hour cold proof won't fix a starter that's already tired out. Next time, try using it right when it's still climbing, not when it starts to fall back down. A weak starter makes weak bread, simple as that.
