That "doubled overnight" thing can be a trap. It might have been all air, no real strength left. A fourteen hour cold proof won't fix a starter that's already tired out. Next time, try using it right when it's still climbing, not when it starts to fall back down. A weak starter makes weak bread, simple as that.

What was the room temp when you mixed your dough?

Probably somewhere between "sweater weather" and "my apartment is a sauna" if I'm being honest. Couldn't tell you the exact temp, just that I was sweating into the bowl and it still turned out flat as a pancake.
