Hot take: My sourdough starter is way stronger since I switched from tap to filtered water.

The rise time dropped from 8 hours to about 5. Anyone else notice a big difference with their water source?

Seriously? My starter's so weak it probably thinks @the_alex's bottled water is a luxury spa day.

My buddy's starter was so weak he said it looked "sad." He switched to bottled water for two weeks, the fancy stuff with minerals. It actually puffed up like a proper sourdough pillow. Made a huge difference.

Try using bottled water for a week to see if it helps.
