They're easier for casual viewing, what should I start with?

Start with Cowboy Bebop's dub.

Ngl, did you also feel like you needed subtitles for the subtitles sometimes? I made the switch last year and my eyes are still grateful. @the_barbara is right about Cowboy Bebop, the dub is basically perfect. For something newer, the Spy x Family dub is really fun and easy to watch.

Pick something you already know the story of. Helps you get used to the voices without getting lost. Old school dubs are solid for this. Fullmetal Alchemist Brotherhood is a great pick. The voices just fit the characters perfectly. Modern comedies work too. Kaguya-sama Love is War has a hilarious dub that adds to the jokes.
