My aunt's neighbor in Toledo showed me her trick for peeling tomatoes and it changed my whole canning game.

She just scored an X on the bottom, dropped them in boiling water for exactly 45 seconds, and the skins slid right off, which saved me hours last summer.

Oh man, that is the absolute best trick! I learned the same thing from my grandma, but she always said 60 seconds. Tried your aunt's 45 second timer last year and it was perfect, way less chance of the tomatoes starting to cook. I was doing that awful peeling with a knife before and it was such a messy pain. It honestly makes canning feel way less like a chore when you aren't fighting with the skins for an hour. Game changer for sure.

My neighbor Sarah gave me a tip about adding a tiny splash of vinegar to the boiling water, maybe a teaspoon. It seems to help the skins split even faster without changing the taste at all. I still use the ice bath right after, but that little extra step made the skins practically slide off on their own. It cut down my prep time for a whole bushel by like twenty minutes last season.
