My grandpa showed me how to patch a plaster wall with a coffee can lid and some joint compound in his garage back in '98.

Is that why my patch jobs look like a kindergartener did them?

What makes you say that? My grandpa's coffee can lid trick was all about getting a flat, rigid base to spread the mud on. Maybe the problem isn't the method, but needing a little more practice smoothing the compound out thin and feathering the edges.
