Warning: whole slab started scaling on me during a pour in Amarillo

Buddy and I were finishing a 30x40 shop slab out near Amarillo last Friday and half the surface started scaling up while we were still floating it. Turns out the ready mix plant bumped our water and we never caught it. Anyone else get burned by a batch like this, and how do you check before the truck dumps?
