The 70-year-old regular who taught me my pour-over trick
Last Tuesday this older guy at my local shop in Portland watched me fumble with my gooseneck kettle and just said, "slow down, let the water kiss the grounds." He showed me his 15-second bloom and now my morning cup tastes way less bitter, I still think about that every time I brew. Anyone else pick up a random habit from a stranger at their cafe?
