That coffee shop in Portland had a pour over station with 8 different single origins

Went to this place called Heart Roasters last weekend and they had like 8 different single origins on rotation for pour overs. Anyone know how they manage to keep that many beans fresh without wasting a ton of product?

Bet they're freezing their beans in smaller portions. Lots of shops do that now, seal em up and pull out what they need for the week. That way they can rotate through all those origins without stuff going stale sitting in a bin. Plus they probably order smaller batches way more often instead of buying a ton at once. Saves them from tossing out old product and keeps the menu fresh for regulars who come in all the time.

That bit about freezing in smaller portions - do they just pull the beans straight from the freezer and grind them, or do they let them come to room temp first? Seems like that could mess with the grind consistency if they're not careful.
