My new guy at the grill station in Phoenix keeps burning the flat iron steaks after 3 minutes on high heat

Honestly, I showed him the timing chart and told him 'medium-high for 90 seconds a side' but he keeps going back to full blast, so what's a better way to get this through to him?

You said you showed him the timing chart, but maybe he needs to feel the difference. Have him cook one steak your way and one his way, then cut them both open side by side. Seeing the gray, overcooked band next to a perfect medium-rare is way clearer than any chart.

The real problem is he's scared of sending out undercooked meat. That fear makes him press down and leave it on too long. You gotta show him the carryover heat does the work after it's off the flame. Let the steak rest and it keeps cooking on its own. Once he trusts that, he'll stop overdoing it.
