My dishie of all people made me rethink how I run Friday prep
Last Tuesday I was breaking down the walk-in after close and Marcus, our new dish guy who's been with us about 6 weeks, asked why I always do the sauce prep myself instead of handing it off. I gave him the usual line about consistency and he just shrugged and said 'but you do it the exact same way every time, right? so teach me the exact same way.' That stopped me cold because he's right, I've been hoarding tasks that could be taught in like 20 minutes. So Thursday before the dinner rush I walked him through the base sauce and the herb oil, and he nailed it on the second try, which honestly was better than my own second try way back. Friday we did 180 covers and I actually got to the line 15 minutes early instead of sweating the prep list. Little thing but it felt like a real win, and Marcus walked out with a bit more pride in his step. Curious how you all decide what to hand off and what stays with you no matter what.
