I finally tried that 'no knead' bread everyone talks about

For years I thought it was just a lazy gimmick, but my buddy at the bakery in Portland swore by it. I mixed flour, water, salt, and yeast last Tuesday and just let it sit for 18 hours. The dough looked like a bubbly mess, but it baked into the best crust I've made at home. Has anyone else had a bread method they were totally wrong about?

People get way too excited about bread (looking at you @shah.shane). It's just flour and water, not some life changing event.

Thought it was total bs until my loaf came out looking like it was from a fancy bakery. My ego is in shambles rn.

What kind of bread did you make? I had the same thing happen with a no-knead recipe, and it's honestly kind of annoying when the internet is right.
